PBS Test Kitchen is a TV show where professional cooks test recipes and equipment, and perform taste tests on various products. Each episode one product is taste tested. Test Kitchen is hosted by Christopher Kimball and is in its tenth season on the Public Broadcasting System.
The Brands Compared
The taste test for dark chocolate chips compared the following four brands of dark chocolate chips:
– Ghirardelli Semi-Sweet Chocolate Baking Chips
– Ghirardelli 60% Bittersweet Chocolate Baking Chips
– Nestle Toll-House Real Semi-Sweet Chocolate Morsels
– Hershey’s Special Dark Chocolate Chips
The taste test asked testers to look at the following components:
– Sweetness level
– Characteristics of the chips, such as added fruit or vanilla flavors
– How the dark chocolate chips melt
The PBS Test Kitchen pros presented the dark chocolate chips in bowls to perform the taste test.
A Few Facts About Dark Chocolate Chips
Chocolate contains cocoa butter, cocoa solids, and sugar. Dark chocolate has 60 percent cacao and should be marked as such on the packaging. According to the U.S. Food and Drug Administration, dark chocolate must contain at least 35 percent cacao. Names for dark chocolate include bittersweet, semisweet, or dark.
The Results of PBS Test Kitchen Taste Test — Dark Chocolate Chips
In the dark chocolate chips taste test, the PBS Test Kitchen found that the chips of lesser quality tasted too sweet and had a chalky and gritty texture, instead of smooth melting texture.
The winner in the dark chocolate chips taste test was the Ghirardelli 60% Bittersweet Chocolate Baking Chips, which come in more of a flat chip shape rather than the traditional teardrop shape. This shape helps the chips melt in more of a line rather than a chunk so more chocolate is distributed per bite.
In second place was Hershey’s Special Dark Chocolate Chips.
In third place was the old stand-by, Nestle Toll-House Real Semi-Sweet Chocolate Morsels, because they were excessively sweet and tasted like “cheap Halloween candy,” according to some testers.
In last place was Ghirardelli Semi-Sweet Chocolate Baking Chips.
