Want a recipe that is healthy yet delicious? This pecan streusel coffee cake is a healthy version of traditional coffee cake. It is very easy to make and is great to bring to a bake sale, event or just as a treat after a nice dinner.
1/2 cup light brown sugar – packed well
2 tablespoons whole wheat flour
1/3 cup chopped pecans
1 teaspoon ground cinnamon
1 tablespoon canola oil
Mix the streusel ingredients together in a small bowl and set aside.

3/4 cup light brown sugar – packed well
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg white
3/4 cup fat free sour cream
1/4 cup canola oil
1 teaspoon vanilla
Step 1- Pre-heat your oven to 350 degrees.
Step 2- Grease the bottom only of a 9′ square pan.
Step 3- In a large mixing bowl, add flour, brown sugar, baking soda, baking powder and salt. Stir together.
Step 4- Add in eggs, sour cream, canola oil and vanilla. Stir together well.
Step 5- Add half the batter to the baking pan. Use a spoon to spread the batter (it will seem thick)
Step 6- Sprinkle half of the streusel topping over the batter. (make sure that it is spread evenly)
Step 7- Top with the remaining batter. If you prefer to, drop it by large spoonfuls. Do not worry if it doesn’t cover all the streusel.
Step 8- Sprinkle the remaining streusel over the top of the batter.
Step 9- Bake for 30 to 35 minutes. Cake is done when a toothpick inserted into the center comes out dry.
Serve warm. (if you do have leftover, it is delicious room temperature as well!)
