Every balanced Christmas meal needs a vegetable. Some vegetables can be more complicated to prepare than others. Green beans, fresh or frozen, make a simple, tasty vegetable that most of your Christmas guests can enjoy.
Although any style of green beans can suffice, French beans cook the fastest and make the best presentation. French beans are long, thin and have thread-like tips. During the month of November, fresh French beans, sometimes called haricot verts, can be difficult to find in regular supermarkets. Membership warehouses, such as Sams Club and Costco, do carry fresh French green beans year-round in the produce section. Frozen French beans, however, can be purchased at any supermarket. A pound of French beans serves six.
Method of Preparation
Finely chop 1/2 onion
Trim French bean ends and rinse.
Place beans in steamer over boiling water and let steam for 5 to 7 minutes.
Remove steamer from boiling water to prevent overcooking.
In a saute pan
Heat 2 tbsp of butter or olive oil.
Saute onion until translucent
Add French beans.
Sprinkle with 1/4 tsp herbes de provence.
Saute for 3 to 4 minutes and remove from heat.
Add salt and pepper to taste.
Place sauteed French beans in a serving dish. For a gourmet touch, sprinkle French beans with slivered almonds.
