Leftover Mashed Potatoes:
Use to thicken soups and stews, instead of flour.
Add an egg and a little flour; shape into a patty and fry in a little oil for potato pancakes.
Spread over beef stew in casserole dish; top with shredded cheddar cheese and bake until hot for quick shepherd’s pie.
