I have seen recipes on the Internet for Lemon Pudding Cheesecake and I thought to myself that a pistachio pudding cheesecake sounded good. I tried substituting the pistachio for the lemon and really loved it. I do not know where I found the original recipe, but this looks like the original recipe I followed http://www.recipelink.com/mf/31/3879. With one simple substitute, I had a new favorite dessert, Pistachio Pudding Cheesecake.
Ingredients Pistachio Pudding Cheesecake
1 8-inch graham cracker crust
2 Cups of Milk or Half-and-Half (best not to use skim milk because it comes out to soft. Half and Half worked pretty well)
1 (3 oz) package of pistachio pudding
1 (8 oz) package of cream cheese
Soften the cream cheese and add it into the pudding and milk. Whisk well and pour into the graham cracker crust. Chill for 1 hour and enjoy this simple Pistachio Pudding Cheesecake.
