Pumpkin muffins are a delicious treat to be served as a healthy breakfast or brunch with sliced fruit, as a snack or dessert, or alongside dinner. These healthy pumpkin muffins contain real pumpkin, which is high in fiber and vitamin A as well as other trace nutrients.
Who wouldn’t love these pumpkin muffins accompanying this Thanksgiving’s dinner? I am eager to share them with family and friends, and I know you will be eager to share them as well. Add chocolate chips for a wonderful dessert treat!
1 cup whole wheat flour
1/2 cup oats
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup chopped pecans (optional)
1 1/2 cups almond milk or soy milk
1 cup canned pumpkin
1/5 cup canola/vegetable oil
1 mashed ripe banana
1/2 teaspoon vanilla extract
1/2 cup vegan sugar
Preheat oven to 375 degrees Fahrenheit.
Mix all moist ingredients together in a large mixing bowl. In a separate bowl, mix together all dry ingredients except the nuts. Add the dry mix into the moist mix and stir together into a nice thick batter. If batter is too thick, add a few tablespoons milk; if too moist, add a few pinches of flour.
Spoon into lightly oiled muffin pan, or into muffin liners. Fill each cup to about 2/3 to 3/4 full. Position some nuts on top of the batter and place in oven for about 35-45 minutes, or until a fork or toothpick comes out clean.
This recipe makes excellent mini-muffins. Adjust cooking time to about 25-30 minutes for the mini-muffins (or until the fork or toothpick comes out clean).
Cow’s milk, regular white sugar, and other non-vegan ingredients can be used if that’s what you prefer. Walnuts and other types of nuts can be substituted if desired. The nuts really give these muffins a nice flavor, texture and crunch as well as adding more nutrients such as protein and vitamins.
Also, a neat way to transform these into a delectable kid-friendly cupcake is to add your favorite icing; vanilla and cream cheese icings work well.
