Don’t waste your time in lengthy lines at IHop, paying $8-$10/person for a breakfast treat you can make at home for pennies!
1 1/4 cup of all purpose flour
1/4 cup of granulated sugar
1/4 cup of buttermilk
1/2 cup of pumpkin out of the can (Do not get the pie mix, it is too watery and your pancakes will not have enough substance!)
Tablespoon of butter
Pinch of salt
Tablespoon of cinnamon
Teaspoon of allspice
Mix all of the ingredients together. Take a slab of butter and melt in a pan, and pour silver dollar sized portions onto the pan to yield approximately 8-10 pancakes.
You can add more or less pumpkin and spices to taste. To get a deep pumpkin taste, you will find that your batter turns an orangish-light brown color. I personally really enjoy the strong pumpkin taste and add slightly more pumpkin than the recipe calls for. For extra fluffy pancakes, add another 1/4 cup of flour.
