Pumpkin Pecan Pie
You will need:
1 can (15 oz.) pumpkin
1 can (14 oz.) sweetened condensed milk
1/4 cup (1/2 stick) salted butter, softened
2 eggs, divided
1 1/2 tsp. pumpkin pie spice
1 1/2 tsp. vanilla
1 graham cracker crust (6 oz.)
2 Tbsp. packed brown sugar
2 Tbsp. dark corn syrup
1 Tbsp. butter, melted
1 tsp. maple flavoring
1 cup chopped pecans
To make the pie:
Step 1. Preheat the oven to 400 degrees.
Step 2. In a large bowl, add the pumpkin, milk, butter, one egg, pie spice, and vanilla. Beat until thoroughly combined.
Step 3. Pour the pumpkin mixture into the pie crust.
Step 4. Bake the pie for 20 minutes.
Step 5. In a medium bowl, mix the other egg, brown sugar, corn syrup, melted butter, and the maple flavoring. Beat until thouroughly combined.
Step 6. Stir the pecans into the sugar-syrup-butter mix.
Step 7. When the pie is done baking for 20 minutes, spread the pecan mixture on top.
Step 8. Reduce the oven temperature to 350 degrees and bake the pie for another 25 minutes.
Step 9. To check for doneness, insert a butter knife near the middle of the pie. If the knife comes out clean, the pie is done. If not, bake for 3 more minutes at a time until the knife comes out clean.
Garnish with whipped cream, if you want. Enjoy!
