Unless you do your own baking, pumpkin pie and pumpkin bread are sweet treats typically made and sold during the fall and winter seasons. Pumpkin pie is my favorite fall treat, but to be honest, I refuse to heat up my kitchen by making one myself. That’s why I created this pumpkin pie inspired shake. It is every bit as delicious as pie but without the sweltering temperatures. Serves 2.
PUMPKIN PIE SHAKE
- 4 oz. canned pumpkin, chilled
- 2 cups vanilla, pumpkin or cinnamon ice cream
- 1-1/2 cups cold low fat milk
- 1/8 teaspoon cinnamon
- 1 teaspoon vanilla
- whipped cream (for garnish)
- cinnamon (for garnish)
Combine all ingredients, except those for garnish, in a blender and blend until smooth. Pour into glasses, top with a little whipped cream and sprinkle of cinnamon.
