This is a simple recipe to ensure that the child gets rice (for carbohydrates) and milk (for calcium).Bring 1 cup of milk to boil in a saucepan. Then add 1cup cooked rice and three table spoons of powdered Jaggery/sugar. Cook it for 10 minutes (keep stirring) and allow the mixture to thicken. Cool and serve lukewarm. You can also add powdered nuts (cashew, almond, and pistachio) and cardamom powder for taste.
Suji/ semolina Upma:
Suji/Semolina: 1/2 cup
Mustard seeds -1/2 tsp
Boiled and diced vegetables
First sauté mustard seeds, onions and boiled vegetables (optional) in oil. Then add suji and lightly fry for a few minutes. Once brown, you can add either 1 glass of water or 1 glass of butter milk (make sure it is not very sour) and keep stirring. Once well cooked, remove from heat, season with cilantro leaves and serve warm. Remember that upma becomes lumpy very quickly, so make only when the child is ready to eat. Reheating upma ruins the consistency.
Semolina -3 tbsp
Powdered nuts (cashew, almond, pistachio) – 1tsp
Sugar to taste
In a dry pan, roast the Semolina and then add a tsp of Ghee. (I add after roasting the Semolina to reduce the amount of Ghee used)
Mix roasted Semolina with milk and stir continuously to make a paste with no lumps.
Heat the remaining milk and add the paste along with sugar, powdered nuts and cardamom powder.
