Thanksgiving is a great time to spend with family and friends, and there’s no better way to do so than with a brunch. This is a small meal but not so much that we’re not hungry for turkey and all the goodies with it!

An easy breakfast casserole is made by browning a pound of ground sausage, then adding a pound of shredded potatoes. Season to taste; add a little diced onion and pepper. In a separate bowl scramble an egg per person. Spread the sausage-potato mixture in a casserole dish and pour scrambled eggs on top. Top with a cup shredded cheddar cheese and bake at 350 until melted, about 10-15 minutes.
A variation of this is dice up potatoes, onions and peppers. Place in cast iron skillet over medium heat with a little grease or oil. Add salt and pepper, a half pound of crumbled sausage or diced ham and cook thoroughly. Top with cheese as you put on the serving plates. These can be diced up ahead of time and sealed tightly. Either of these can be adjusted allowing for the number of people expected.
Still another easy Thanksgiving brunch recipe serves a larger crowd. Line a shallow pan with 12 slices of Canadian bacon or ham. Top with 12 slices of cheese, then break a dozen eggs over the pan, one per serving. Drizzle a half pint of cream over until the yolks peek through and bake at 450F for 10 minutes. Remove sprinkle with grated Parmesan cheese and bake an additional 8-10 minutes. Cut in squares and serve. This can serve 6-12 depending on how hungry you are!
