Easy Pumpkin Chocolate Muffin Ingredients
1 15 oz can of pure pumpkin – not pie filling
1 box of chocolate cake mix – German chocolate, Swiss chocolate, dark chocolate, milk chocolate, Devil’s food, whichever is your favorite. I hear you can even get low fat chocolate cake mix if you are on a diet.
One of my favorite things about this recipe is that you do not need eggs. I developed an egg allergy a few years ago so it is hard for me to find food that I like that does not contain eggs. The reason that it is low fat is because you do not make it with oil. It is kind of like when you bake cakes and use applesauce instead of oil. Don’t add anything other than the pumpkin and the cake mix unless you are not concerned with the muffins being low fat and want to throw in some chocolate chips.
Easy Pumpkin Chocolate Muffin Directions
First you will need to preheat your oven to 400. Mix the pure pumpkin and cake mix together. It is going to be very thick, but you do not need to add water or anything else to thin it out. Put some muffin liners in your muffin pan, spray it with non-stick cooking spray, or rub it down with butter. Scoop your muffin mix into the pan and bake in the oven for anywhere from 15 to 20 minutes.
