Red Brick Pizza is the newest addition to Chestertown, Maryland’s dining scene. Red brick in Italian means terra cotta stone, referring to the way pizzas were traditionally baked on terra cotta stones.
According to co founders James and Lynn Minidis, the special brick ovens sear the pizzas at 1000 degrees F. in 3 minutes. This gives the thin pizza a delicate crisp crust that has fewer calories and is a healthy food choice.
Red Brick Pizza is all about choice. RBP offers a choice of three dough’s; the original, acai berry multi grain whole wheat, and a gluten free crust. Choose from 6 different crust including Parmesan Garlic, Sun Dried Tomato, Chipotle, Pesto Parmesan, Roasted red Pepper, and everything.
Sauces include BBQ, Chipotle, Creamy White Garlic, Olive oil and garlic, Pesto, Traditional Red, Roasted Red Pepper, Sun Dried Tomato Basil and Thai.
Patrons even have a choice when it comes to the type of cheese they want on their pizza.
Take your pick from traditional mozzarella and parmesan to feta, ricotta to Daiya , a dairy free cheese.
Toppings run the gamut from the usual pepperoni and sausage to diced cashews, pine nuts, prosciutto and fire roasted chicken.
If all these choices are too mind boggling try ordering one of the pizza favorites from the menu. The Thai pizza features chicken, red onions, carrots, cashews, mozzarella, cilantro and Thai sauce.
The Buffalo pizza is topped with red hot buffalo chicken, red onions, celery, carrots, mozzarella, red hot pizza crust and drizzled with ranch dressing just before being served.
Red Brick Pizza also features chopped salads, flat bread baked sandwiches, gelato and an assortment of wine, beer and soft drinks.
Prices are reasonable starting at 6 dollars for a small pizza and going up to 15 dollars for a large gourmet pizza. Red brick pizza also offers community fund raising through its Charity Café available to church groups, schools and other non profit groups.
