I am committed to ridding myself of white flour foods. I did it once before and felt so much better in conjunction with losing a ton of weight.
Unfortunately, slipping back into old habits became easy when I could no longer afford to make one type of meal for my mother and husband and a healthier version for myself. Since they wouldn’t eat what I did, I was the one forced to cave.
Today; however, my mother’s diet is monitored for her and my husband finally sees the light. He recognizes that whole-wheat foods don’t necessarily mean tasteless foods. So slowly but surely I’m sneaking healthier alternatives into our regular diets.
Both my husband and I love pancakes for breakfast. However, white flour pancakes aren’t that good for you. Unfortunately, wheat pancakes were once difficult to find and those you could locate, tasted like cardboard.
Thankfully today there are lots of options when it comes to whole-wheat foods, including pancakes. One of my favorites comes from Shawnee Mills, which is manufactured in my home state of Oklahoma. It is Shawnee Mills Whole Wheat Pancake-Waffle Mix.
One 6-oz bag makes 10 medium size pancakes, three of which constitute a serving. There are, therefore, just over 3 servings per bag.
A serving of Shawnee Mills Whole Wheat Pancake-Waffle Mix equals 230 calories. Of that amount, 70 calories are fat-related.
There are 5 grams of fat in each serving. One gram of that comes from saturated fat. Thankfully, Shawnee Mills Whole Wheat Pancake-Waffle Mix contains no trans fat.
These pancakes also hold 30 grams of carbohydrate, 3 grams of sugar and 640 milligrams of salt. However, they do not contain any cholesterol.
On the flip side, Shawnee Mills Whole Wheat Pancake-Waffle Mix contains 5 grams of fiber and 4 grams of protein. Additionally, these pancakes offer 25% of the daily-recommended amount of calcium; 8% of the required iron and 6% of the needed folate.
Ingredients include buttermilk, corn syrup solids, enriched bleached flour, enriched degerminated yellow corn meal, malted barley flour, sodium bicarbonate, salt, vegetable shortening and whole wheat flour. It also contains dextrose, hydrogenated cottonseed oil, partially hydrogenated soybean oil, sodium caseinate, mono and diglycerides, moncalcium phosphate and sodium aluminum phosphate.
To make pancakes from this Shawnee Mills mix all you have to do is add one egg and 1.25 cups of milk. Then, wisk the batter smooth. Pour about 1/4 cup of batter onto a pre-heated and pre-greased griddle and, voila, you have a delicious and nutritious breakfast for just pennies.
To make waffles instead of pancakes, mix the batter as directed above but add in 2 Tbsp. of oil as well. Wisk smooth and pour the mixture into a preheated waffle maker. Bake until they are a crispy golden brown.
To mix things up, you can add blueberries, chocolate chips, nuts or anything else you want into the pancake or waffle mix before baking. Better still, top the finished pancakes with your favorite fruit or even whipped cream.
The results are delicious pancakes each and every time. Here is my summary review:
Taste: 5 stars. Pancakes made from Shawnee Mills Whole Wheat Pancake-Waffle Mix are light, fluffy, and utterly delicious. You can’t make better from scratch.
Baking ease: 5 stars. This mix is simple enough a child can do it. In fact, my grandson helps me make them all of the time. It is nearly goof proof.
Packaging: 5 stars. Shawnee Mills Whole Wheat Pancake-Waffle Mix comes in a pale yellow package with red and black trim. The Shawnee Mills logo is printed on the front along with a picture of the pancakes. The pacakaging is distinctive. Once you see, you will be able to easily identify it again.
Ease of storage: 5 stars. The bag is compact at just under 8″ in length by 5″ in width by 1″ in depth. It can fit easily into a kitchen cabinet, pantry or drawer.
Freshness: 5 stars. Shawnee Mills packaging is heavy to help hold in the freshness and and sealed tightly to prevent moisture content. This mix will last quite a long time.
Dietary value: 4 star. Pancakes aren’t necessarily the best thing for you, at least on a regular basis. These whole-wheat pancakes still offer their fare share of carbs and sugar, but they are low in fat and contain no cholesterol. Therefore, an occasional splurge should do little in the way of permanent damage.
Availability: 3 stars. It was easy to find Shawnee Mills Whole Wheat Pancake-Waffle Mix when I lived in Oklahoma, where the product was born. Unfortunately, it isn’t widely distributed so it may take awhile to find a local store that carries it.
Price: 5 stars. Shawnee Mills Whole Wheat Pancake-Waffle Mix retails for a little over $1 a bag. That makes each pancake a mere $.10 apiece.
Product purchase probability: 5 stars. I keep this mix on hand whenever I can find it. It is a family favorite.
