Nothing is better for busy families trying to save money then using a Crockpot (slow cooker) for making dinner. With a Crockpot (slow cooker) you can prep the meal that morning or the day before, let it cook all day and come home to a fully prepared meal. Don’t forget Crockpot’s (slow cookers) are a great way to save money; My Crockpot (slow cooker) black beans are the easiest to make, taste great and are super inexpensive and healthy.
SLOW COOKER or Crockpot BLACK BEANS
1 bag of dry black beans
½ yellow onion
½ purple onion
1 bell pepper
1 can diced tomatoes (15 oz)
1 bay leaf
1 jalapeno pepper
Chopped garlic to taste
Rinse and soak the beans in a pot or large bowl covered with 3-4 inches of cold water. Pick out any stones or beans that float. Soak the beans over night. They say soaking the beans overnight reduces the amount of gas one experiences later on, don’t know if this is true but it is interesting. A quicker method is to boil the beans for 2-3 minutes in place of soaking over night.
Dice the onions, bell pepper and garlic. If you want more flavor with out the heat then do not cut the jalapeno, if you want more heat then cut the jalapeno and leave in the seeds.
Pour the water out of the beans and add to the crock pot. Add enough water to the crock pot to almost cover the beans. Add the vegetables and the whole bay leaf. Cover and cook on low for 4 hours then on high for two. If you have 9+ hours of cooking time then the crock pot can be placed on low for the full amount of cooking time.
½ hour to 1 hour before serving remove about 1 cup of beans with liquid and blend smooth then add back to the crock pot. Add the tomatoes to the crock pot and stir, continue to cook until ready to serve.
You can easily add any other spices that you like or meat at the beginning of the cooking process. This is a great meal for when it is cold out side and as they say beans are good for your heart.
