This recipe was such a joy to create. Many times over the past few months I would whip up a batch of these cookies trying different ingredients and combinations. All were good, however, these were the best. I hope you enjoy them.
2 cups all purpose flour
2 tsp. baking powder
Â½ cup Hershey’s Cocoa powder
Â½ tsp. salt
Â½ cup crushed walnut pieces
2/3 cup canola oil
3 tsp. vanilla
Â¾ cup white granulated sugar
Â½ cup light brown sugar
In a large bowl, mix flour, baking powder, salt, cocoa powder and walnut pieces. Stir well.
In a seperate bowl, mix eggs, canola oil, vanilla, white sugar and brown sugar. Whisk until creamy. This mixture should be runny.
Add egg mixture to flour mixture. Stir until all flour is gone. Mixture will be very stiff and heavy.
Put mixture in refrigerator for at least one hour to chill.
Remove from refrigerator and roll walnut size pieces of the dough in your hands and place balls on ungreased cookie sheet. Press balls down with a glass bottom that has been dipped in sugar.
Place in a pre-heated 375Â° oven and bake for 8 to 10 minutes.
Makes 3-4 dozen cookies depending on ball size.
