3/4c. pumpkin I use (Libby’s easy pumpkin pie mix)
1 1/2 tsp. vanilla
2 1/2 c flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp allspice
1/2 tsp ground cloves
Heat oven to 375 degrees, grease your cookie sheet.
First your going to beat the eggs, butter, sugar, pumpkin, and vanilla in a large bowl. I use an electric mixer but stirring it by hand is fine. In a seperate bowl mix flour, baking soda, salt, allspice, and ground cloves. Slowly mix all the ingredients together into large bowl. The batter should be sticky, scoop a good amount onto a spoon and place on the cookie sheet. Make sure to space them about an inch apart. Place in the oven for approximately 10-12 min. These cookies will come out fluffy and soft, and deliciously absorb milk.
