These tasty chicken sandwiches have hint of the southwest without being over powering. They’re easy to make and kids love them.
4 pieces wheat sandwich bread
1/3 cup pre-cooked chicken, fine chopped
1/4 cup white onion, minced
1 very large clove garlic, minced
1/3 cup mozzarella, finely shredded
10 large leafs fresh parsley
1/2 cup fresh, raw spinach, chopped small
1/4 cup mayonnaise
1/4 teaspoon chili powder
salt & pepper to taste
Set sandwich bread aside.
In medium bowl combine all other ingredients. Mix well.
Divide chicken salad, spread half one one piece of bread then top with another to make a sandwich. Repeat. Cut chicken sandwiches and serve.
