Strawberries might well be the world’s favorite fruit. It’s so versatile! They can be eaten as-is or made into jam or jelly. They can be added in a fruit salad or made into a dessert. No matter how you serve strawberries they’re going to be delicious! Suitable for any occasion or any regular day, strawberry pie is a favorite across the nation. But, no matter how many times you’ve eaten it, you haven’t had strawberry pie until you’ve had strawberry Jell-O pie!
Strawberry-flavored Jell-O has a real strawberry taste, and when you use it as the glaze for your pie, it just enhances the taste of those delicious strawberries. And, when you make the pie glaze from Jell-O you save a lot of money over the price of that expensive strawberry glaze you purchase at the grocery store.
You can make your own pie crust or you can purchase a frozen crust. Either way, poke holes in the bottom of the crust with a fork, then brown the crust and allow it to cool completely. As it cools you can prepare the strawberries.
The strawberries should already be rinsed and dry before making the pie crust. Remove all greenery before rinsing and drying them. Now decide on the way you want to present the strawberries. You can place them in the pie shell hole or you can cut them into slices. Or, just cut each strawberry in half. Small strawberries work well when they’re whole but really large strawberries are better when cut.
To make the glaze pour a cup of 7up in a saucepan and add 3 tablespoons of corn starch and a cup of sugar. Cook the mix, stirring often, until it comes to a boil and begins to thicken. Remove it from the heat and add a half-packet of strawberry Jell-O. Stir until the powder completely dissolves. Allow the mixture to cool for a few minutes.
After the strawberries are arranged in the pie shell simply pour the liquid mixture over the top of them. Add enough of the mixture so that it comes nearly all the way to the top edge of the pie crust. Place the pie in the refrigerator and chill for several hours. Serve with a dollup of whipped cream on top or cover the entire pie with whipped cream. It’s delicious!
