My family loves sweet potatoes and this casserole dish is a family favorite at our holiday dinner table. It does not contain marshmallows. Instead, this sweet potato casserole is simply made with brown sugar and pineapples. The pineapples enhance the sweet potatoes and go well with turkey or ham.
This recipe comes from a high school friend’s family who made their sweet potato casserole with pineapple instead of marshmallow. I tried it on my family and it has been a standard at our table for over 40 years.
You can use yams instead of sweet potatoes, however, sweet potatoes are more beneficial.
Sweet Potato Casserole with Pineapple
2-3 Sweet potatoes or yams
1/2 cup brown sugar
1 small can crushed pineapples
You can cook the sweet potatoes by either boiling them or in the pressure cooker. Boiling method: Peel and slice sweet potatoes about 1 inch thick. Place in pot and cover with warm water. Boil 30-40 minutes or until tender. They’re done when you can stick a fork in the middle of several sweet potato slices and it’s tender. Pressure cooker method: This is the quickest way to cook sweet potatoes. Cook the sweet potatoes according to the directions with your pressure cooker.
After sweet potatoes are cooked, drain and peel them. Mash them in the pan with a potato masher or fork. Add brown sugar and pineapple including juice.
Place mixture in a casserole dish with lid and bake in the oven for 10-20 minutes until the brown sugar melts. To taste test, stir mixture and taste. You may need to add more brown sugar or more pineapple if you bought the bigger can. If you add more brown sugar, place the casserole back in the oven for another 10 minutes and taste test again.
