Thanksgiving Day Lunch
With all the options of delicious dishes for Thanksgiving it is hard to choose which one would be my favorite. The following two would be at the top of my list. Try them and see if they make your favorite list.
Sweet Potato Slices
4 medium sweet potatoes
1 tablespoon butter
2 tablespoons honey
1/3 cup brown sugar
salt and pepper
Preheat oven to 325º
Step 1: Wash and boil the sweet potatoes in water just until tender (about 20 minutes)
Step 2: Removed skins and slices ¼” thick.
Step 3: Spray a baking dish with a non stick spray and place the sweet potatoes in a single layer.
Step 4: Dot the slices with the butter.
Step 5: Mix the honey, brown sugar, salt, and pepper together.
Step 6: Spread the mixture over the potatoes.
Step 7: Bake for 30 minutes.
Serves 4 to 6
4 cups sliced yellow squash
1 cup sliced white onion
¼ cup butter, melted
2 cup bread crumbs
1 cup shredded Cheddar cheese
¾ cup sour cream
2 eggs, slightly beaten
salt and pepper to taste
Preheat oven to 350º
Step 1: In a large skillet cook the sliced squash and onion in a cup and half of water over a medium heat. Cook until they are tender (about 5 to 10 minutes)
Step 2: Drain Well
Step 3: Add the butter and let it melt.
Step 4: In a medium bowl add the bread crumbs, cheese, salt and pepper.
Step 5: In a small bowl mix the sour cream and the slightly beaten eggs.
Step 6: Mix together the squash and onion with half of the bread crumbs mixture and the sour cream mixture into a casserole dish.
Step 7: Top with the remaining crumb mixture and bake for 25 to 30 minutes.
Serves 4 to 6
