Sometimes I just don’t feel like spending a lot of time cooking, which I’m sure you can relate to. At these times, I just like to throw a few ingredients together and call it a meal. This is how I came up with my egg and rice dinner; now you can make it, too!
- 4 medium eggs
- 1 box Rice-a-Roni (any flavor)
- 4 pieces bread
- Shredded cheese
Step 1: Begin cooking the Rice-a-Roni according to the directions on the box. While the rice is cooking, prepare the rest of the meal following the next steps.
Step 2: Take out four dinner plates and toast two pieces of your favorite bread. Place one piece of toast on each plate.
Step 3: Fry four eggs, any way you choose. I like the yolk to be runny because it mixes in with the rice and adds extra flavor, but that’s your choice. Place one egg on each piece of toast.
Step 4: Once the rice has finished cooking, scoop it onto your eggs and toast. Sprinkle shredded cheese on top and add a garnish of your choice (tomato slices, for example).
Step 5: Enjoy!
Yield: Four servings. The recipe can be modified according to the number of hungry people attending this meal.
