Let’s be honest – you can only eat so many turkey sandwiches before you want to go crazy. This recipe is the perfect answer to all of those Thanksgiving leftovers. Make it any way you want with whatever leftovers your family feast has on hand.
Turkey and Vegetable Strata
You will need:
2 cups turkey, cut into cubes
4 cups vegetables (green bean casserole, corn, broccoli, whatever you have)
3 cups leftover bread, cut into cubes (biscuits, crescents, rolls, whatever you have – if you have none, you can use a loaf of Italian bread)
1 1/2 cups milk
1 tsp seasoned salt
Leftover cheese (from the cheese and crackers platter – if you have none, you can use 1 1/2 cups shredded cheddar)
To make the strata:
Step 1. Preheat the oven to 375 degrees.
Step 2. Grease a 2-quart round or oval baking dish. (I use Pam)
Step 3. In a large bowl, add the turkey, vegetables, and bread. Toss gently.
Step 4. Place mixture into baking dish.
Step 5. In the same bowl, whisk the eggs, milk, and salt.
Step 6. Pour the egg mixture over the turkey and vegetable mixture.
Step 7. Lay your cheese evenly on top of the mixture.
Step 8. Bake for 45 minutes, or until the internal temperature reaches 160. Enjoy!
