It’s the end of the week and the fridge and pantry are running low, here are some ideas on what to make with your last few ingredients.
Chicken Salad is a good way to make last night’s dinner into today’s lunch. It’s simple and easy to make and can be customized to your own family’s taste. I’m sure many of you have made tuna salad; all you have to do is replace the tuna with the chicken. Here is my recipe:
2-3 small chicken thighs (really you can use any part of the chicken that you have)
2-3 hardboiled eggs, diced
10-15 dill pickles chips, diced
¼ of a small onion, diced
2-3 tbsp of mayo
Salt and Pepper to taste
Using your fingers if they are cold or two forks if they are hot debone and shred the chicken. Add all the other ingredients into a medium sized bowl with a lid and mix well. Serve on bread with chips or your favorite sandwich side.
