These Banana Bars are awesome. The Banana Bars are light and yummy. They cook up in half the time of Banana Bread. If you’re not a fan of nuts or have nut allergies, these bars are good without nuts, too. Best of all they make a 13X9X2 inch pan meaning you’ll have more then enough bars for your family with one batch.
You will need: 1 cup of sugar, 2 mashed ripe bananas, 1/3 cup of vegetable oil, 2 eggs, 1 cup flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon cinnamon, 1/4 teaspoon salt, 1/2 cup of walnuts or pecans and brown sugar.
Preheat oven to 350 degrees.
Prepare a 13X9X2 pan with non stick or grease.
In a large bowl, mix the sugar, bananas, eggs and oil together. Next stir in the flour, paking powder, baking soda, cinnamon and salt. When you have those mixed together well, add in your walnuts or pecan (if desired).
Next spoon the batter into the prepared pan and bake. Bake 20 – 25 minutes or until they pass the toothpick or knife test.
Upon removing from the oven, immediately sprinkle a little brown sugar over the top. Should be about 2 table spoons. Put as much as you desire. If you prefer to use a cream cheese frosting, skip the brown sugar.
The Banana Bars stay moist when properly covered. They should last a couple of days, if you can prevent people from eating them.
