This recipe is one I came up with after playing around in the kitchen all day, and mixing various leftovers. I had cooked plain meals for the last time, and was dying to try something new. I remembered in past recipes that onions simmered in a white wine made a really great gravy-like sauce to pour over chicken and mashed potatoes. Not only was this a delight to cook, but it was so incredibly tasty that I’ve had multiple requests from guests to repeat this recipe. It looks complicated at first, but the only things you’ll really have to go out and get are the onion, baby bella mushrooms, and chicken thighs.
1/8th cup olive oil
1lb chicken thighs
3/4th cup white wine
1 cup chicken broth
2 yellow onions
3 tablespoons italian dressing
1 pkg chopped brown mushrooms
1/4th cup garlic and herb seasoning
salt and pepper to taste
Rub the garlic and herb seasoning all over the chicken thighs and set to marinade for 30min-1hour
Chop up the onions in 2in slivers, and mix up Italian dressing in a bowl to marinade. Let sit for 15 min
Pour 1/8th cup olive oil in Large Saucepan, and brown both sides of chicken thighs (approx 5 min on each side) on medium to med high heat depending on your stove.
Pour off olive oil, and pour in onions. Let simmer about 5 minutes, then pour in the wine. Let the wine and onions boil about 10 more minutes, then add the mushrooms
Cook the mushrooms, onions, chicken, and gently stir in 1 cup chicken broth.
Let that cook about 10-15 minutes until liquid becomes thicker, then serve!
