Apples, apples and more apples. Are you looking for something new to do with all those apples? Apple Walnut Cake is a fantastic idea. This cake is moist and it will last, if you can stop people from eating it.
For the cake, you’ll need: 2 cups of flour, 1 tsp. baking powder, 1 tsp baking soda, 3/4 tsp. ground cinnamon, 1/2 tsp salt, 6 Tbs margarine or butter at room temperature, 1 1/4 cup granulated sugar, 2 eggs, 3/4 cup apple sauce and 1 cup sour cream.
For the walnut topping, you’ll need: 1/2 cup of margarine or butter, 1/2 cup packed brown sugar, 1/2 cup granulated sugar, 1 1/4 tsp ground cinnamon, 1 cup of flour, 1/4 cup confectioner sugar, 1 cup of chopped walnuts.
Make the topping first, as it needs to be slightly refrigerated. Combine the margarine or butter with brown sugar, granulated sugar amd cinnamon. Mix until blended. Next add the flour, confectioner sugar and walnuts. This mixture will become crumbly. Put this mixture in the refrigerator until ready to use.
Next, preheat the oven to 350 degrees. Prepare a cake pan (9×13 inch) by using no stick spray or lightly coat with butter or margarine.
In a large bowl, combine flour, baking powder, baking soda, cinnamon and salt.
In another bowl, combine margarine or butter with granulated sugar. Using a mixer beat for 30 seconds. Add one egg to the mixture at a time. Make sure you stop and scrape the mixture from the sides of the bowl. Slowly add half or the flour until completely mixed. Add in the apple sauce, again mixing completely. Now mix in the remaining flour and sour cream. Mix until completely mixed together but do not over mix. Put this batter in the cake pan.
Bake until the edges of the cake are slightly tan or “set”. This should take about 15 minutes to achieve. Evenly add the refrigerated topping mixture to the cake. Let the cake back another 30 to 45 minutes. Use a knife or tooth pick to insert in the center of the cake. If the item comes out clean, the cake is done. If not, let it back another 3 – 5 minutes and check again.
Let the cake rest for 20 minutes when removed from oven. This cake can be served warm or cooled. It’s a great cake to take to an event and it travels well, if you are traveling.
