This is a delicious low calorie recipe that doesn’t taste low calorie. The aroma of apples and cinnamon will fill your home as it bakes. It contains some unusual ingredients but comes out tasting wonderful.
2 cups whole wheat flour
¾ cup light brown sugar – well packed
2 tablespoons white sugar
3 teaspoons baking powder
½ teaspoon salt
2 teaspoons ground cinnamon
10 ounces Greek non-fat yogurt (vanilla)
¼ cup canola oil
1 tablespoon milk (non-fat)
1 medium apple – cored and chopped into small pieces
1/3 cup chopped walnuts
2 tablespoons whole wheat flour
2 tablespoons light brown sugar
1 teaspoon ground cinnamon
1 tablespoon canola oil
Preheat oven to 350 degrees
In a small bowl mix together the topping ingredients and set aside.
Combine flour, sugar, baking powder, salt and cinnamon in a medium bowl.
In a large bowl, combine the yogurt, egg, oil and milk. Stir together well.
Add in the dry ingredients and stir until just moistened.
Stir in the apples and the walnuts.
Spread the batter into a greased 9 inch baking pan. The batter will be thick.
Sprinkle the topping mix over the cake batter. A variation is to stir the topping into the batter using a butter knife in order to give the cake a more streusel-like taste.
Bake for 25 to 30 minutes or until a toothpick inserted in the middle comes out dry.
This recipe is low in fat because of the fat free yogurt. If you use plain non-fat yogurt add 1 teaspoon of vanilla to the batter. You can substitute regular yogurt. Whole milk can be used instead of non-fat. Vegetable oil can be substituted also instead of canola oil. The ingredients in this recipe make it healthier than traditional crumb cake recipes.
