Again this recipe was birthed in my mind from years of juicing and throwing away the left over pulp. I realized that something great could be done with the pulp. I hate throwing anything really useful away.
First you start by juicing two fresh beets and two apples. After juicing skim the creamy pulp from top of glass and save. Then take the pulp that was separated by juicer into separate compartment and save. Of course you can drink the beet juice but to really enjoy for those that can’t imagine drinking beet juice add just a little orange juice, drink and enjoy.
Now for the muffin recipe,
1 box of Jiffy corn muffin mix
half cup of creamy beet juice skimmed from juice after juicing
all of the pulp from the juicing machine after juicing
half teaspoon cream of tartar
1/4 teaspoon vanilla flavoring
half can Borden condensed sweetened milk
1 tablespoon Stevia
cup of raisins & dried cranberries
tablespoon of sliced almonds
1/4 cup of almond milk
In a large bowl mix ingredients until spoon consistency. Grease or spray muffin pan to keep from sticking add 2 tablespoons of mixture to each section. Bake on 350 for 30 to 45 minutes depending on your oven. Do tooth pic test to make sure done. Enjoy for the healthiest result , if you want to butter use unsalted butter.
