Carrot and Peas rice is a very easy and simple recipe that I just love to serve to my family, especially my kid who would just not want to eat carrots otherwise. Its an excellent side dish with baked fish or barbeque chicken. Its healthy and tasty at the same time.
1. 2 Cups of basmati rice
2. 2 medium size carrots.
3. 1 Cup of green peas
4.1 Medium size onion
5.6 Cloves of Garlic
6.1/2 inch piece of ginger
7.1 1/2 tbs oil
8.2 Cups of water
9.1 medium size cinnamon stick
11. 2 tsp salt (or to taste)
12.1/4 cup of Salted Cashews (optional)
1.Chop the Onion Finely
2.Chop the carrots into small bite size pieces.
3.Grate the ginger and garlic.
4.Wash the rice and drain all the water and keep it aside.
5.Take a pan and put oil in it.Keep the stove on medium flame. In the hot oil, put the cinnamon stick,cloves, onion and salt.
6. Sir occasionally, so the onions don’t burn. Once the onion turns a little translucent, add in the ginger and garlic, chopped carrots, peas and stir fry for 2 minutes.
7. Next, add in the washed rice and stir fry for 3-4 minute. stir occasionally since you don’t want the rice to burn from the bottom. Thereafter, swithch off the stove.
8.Put the contents of your pan in the rice cooker, add water. This is also the time to check for salt and if needed add as per your taste.
9. Cook the rice as per your rice cooker instructions. Once the cooking is complete, uncover the rice cooker and fluff up the rice with a fork ,add in the cashews and put the cover back on for 2 more minutes.
10. Next, uncover and transfer the dish on to your serving platter. Carrot and Peas rice is ready to be served. For best results, serve warm.
