After spending the morning at a couple of farmer’s markets, my husband used some of what I brought home and came up with a really tasty crockpot beef stew using the grass fed beef ribs, jalapeño, Serrano peppers, and onion that I brought home. Here is the beef crockpot recipe.
1 1/4 beef ribs with bones and fat.
4 whole carrots
1 whole white onion
1 Serrano pepper
1/4 cup fresh cilantro
1 cup green split peas
2 tablespoons Himalayan Pink Salt
1/2 cup barbeque sauce
4 tablespoons Worcestershire sauce
First, slice the beef ribs leaving the bone and fat on. This helps add flavor to the stew during cooking. Next, add all the ingredients except for the carrots and split peas to crockpot. Make sure there is enough water to cover the beef and cook for about 2 and 1/2 hours. Then, add carrots and let cook for another 30 minutes and finally add the green split peas and cook until the split peas are soft. Make sure there is plenty of water left in the crockpot for cooking the split peas. At the end of cooking, take out the beef, debone ribs, and cut into little pieces. Finally, add the beef back into the stew and enjoy.
