This comfort food recipe is inexpensive and makes about four to six servings.
Shepherd’s pie casserole
1) One medium onion
2) 1lb lean ground beef
3) four servings instant mashed potatoes
4) one package brown gravy mix
5) two cups frozen mixed vegetables thawed and pat dry.
6) two cups shredded sharp cheddar cheese.
7) 1/2 cup grated Parmesan cheese.
1) Large frying pan.
2) Sharp knife
3) measuring cups
4) Large casserole dish
This is an easy recipe and takes about an hour from start to finish. Start by peeling an onion. Cut the onion into small pieces and place in the frying pan. Take the ground beef and crumble it into the frying pan. Cook the mixture on medium to high heat until ground beef is thoroughly cooked. Remove from heat and drain any remaining pan juices. Next start your instant mashed potatoes. Follow the directions on the package to make four servings. Whip the mashed potatoes until you get a smooth but not runny mixture.
Preheat your oven to 350 degrees.
You are now ready to place the ground beef and onion mixture into the casserole dish. Just make a nice even layer along the bottom of the dish. Now, take the thawed frozen vegetables and layer them on top of the ground beef. Make sure you have patted them dry or you will get a lot of water in your finished product. Take the mashed potatoes and layer them on top of the vegetables. Make a nice smooth layer filling in any holes and cracks. Finally, top the casserole with the shredded sharp cheddar cheese. Make sure you leave about 1/2 inch of room at the top of the casserole so it doesn’t boil over and mess up your stove.
Place the casserole in the oven uncovered and bake until the cheese starts turning a nice shade of brown, about fifteen to twenty minutes. While the casserole is baking start making your gravy. Just follow the directions on the package. Remove the casserole from the oven. Top with a thin coating of Parmesan cheese. Let cool for five minutes, top with the gravy then serve. My wife likes a bowl of chicken soup to go with this casserole. Enjoy!
