Dinner doesn’t have to be a hassle. Not if you plan ahead and have a great recipe. This chicken celery recipe is affordable, low in calories, and best of all for working mothers/dads/parents – it’s easy to make. Most mothers find themselves short on time, but we don’t want the cost and bad eating habits that fast food provides.
That’s when this meal comes in handy because it’s better for you than fast food, and simple to make. It’s also delicious. And you can’t go wrong with that.
1 package of boneless chicken breast (cut into small pieces)
2 cups chicken broth
8 tablespoons butter
1 teaspoon salt
1/2 teaspoon pepper
1 cup chopped parsley
4 cups finely chopped celery
Melt butter is 3 quart pot. Add chicken, seasoning, and onions and saute until chicken is browned. Add chicken broth and cover. Let it cook on simmer until chicken is done.
In a separate pan: melt butter in skillet, add celery and parsley, and saute for 10 minutes. Add this to the chicken, allowing 10 more minutes to simmer. Serve with rice.
