Cauliflower – it’s one of those vegetables we all know we should eat, and we buy it, and there it sits in the refrigerator. Unsure of how to prepare it in a way that our families will enjoy, we let it sit, hoping inspiration will arrive. Well, here’s an idea for a quick, easy, delicious cream of cauliflower soup that your whole family will enjoy. It’s a year-round favorite in our house and is a great way to get some extra vegetables in your diet. This soup also works great substituting broccoli for the cauliflower, or even using both vegetables for a unique soup. Here are the ingredient’s you’ll need:
1 head of cauliflower, washed, stemmed, and chopped
½ onion, diced
2 green onions, chopped
1 medium size potato, peeled and diced
Salt and pepper to taste
¾ cup of milk
In a large pot, sauté the onion and green onions in a teaspoon of vegetable oil. Sauté for about four or five minutes, until the vegetables are soft. Add 4 cups of chicken broth, and the chopped cauliflower and potato. Let cook for about 15-20 minutes, until the cauliflower and potato are soft. Use an immersion wand blender or traditional stand blender to puree the ingredients until smooth. Add the milk and then the salt and pepper to taste. For a delicious way to eat this soup, pop some popcorn and sprinkle on top – it adds a great crunch and extra flavor to this filling soup. You can serve this as a meal itself or as an appetizer to a main course. Enjoy!
