Note: this vegetarian patty is aimed at vegetarians who eat eggs. If you do not eat real eggs and are vegetarian, you can substitute for artificial eggs and still have a yummy patty to eat by itself or as a replacement hamburger patty. Quick and easy!
I am always on the lookout for a great vegetarian recipe, and jumped on this one because it is so incredibly simple and easy. All you need is an egg (or egg substitute), a small bag of plain potato chips, and seasonings of your choice to spice your patty up. This simple vegetarian patty can be used as a replacement hamburger patty or eaten on its own or placed in any sandwich and is oddly yummy!
To make a homemade vegetarian patty simply take a small bag of plain potato chips (or a sandwich bag of potato chips from a larger bag) and crunch the potato chips in the bag until you have small crumbs. Pour the bag into a skillet with about 1/2 teaspoon of olive or vegetable oil or a small amount of butter, and crack an egg into the crumbs. Simply fry this concoction into a patty form, adding salt, garlic, Italian seasonings, pepper, or whatever seasonings you’d like until the patty is cooked. Brown each side to keep it crunchy. You’re done! Quick and simple, and delicious as a replacement hamburger patty or a quick treat whenever you’d like!
You can also saute spinach or mushrooms before adding the potato chips and egg to the mixture to add more flavor to your patty. You can sprinkle cheese on it as well. It is best to eat the patties within a few hours of making them, as they become soft in the fridge and don’t reheat well, so make them as you need them.
I got this odd recipe from a vegetarian who served in the military. Using what she had on hand, she made these patties often to compensate for her diet with what was available. A simple and satisfying recipe that I truly enjoy as well.
You can substitute the potato chips for hash browns as well, cooking them thoroughly before adding egg. I usually add green bell peppers and onions and mushrooms to the mix for an excellent veggie patty with my favorite seasonings (cumin, pepper, garlic, and parsley). Seasonings are what make this patty truly delectable to your tastes. Enjoy!
