Reubens have long been my favorite sandwich, but they are not very friendly to a low carb diet. Determined to figure out a way to still enjoy my special treat, I came up with the following recipe, almost as delicious as the original, with a lot less guilt!
Low sodium ketchup
Lean, thinly sliced corned beef
Place two tablespoons of sauerkraut per serving in a wire strainer and let drain while preparing the rest of the ingredients.
Mix the ketchup, mayonnaise and dill relish in proportions to satisfy personal taste for your own homemade Thousand Island dressing. Set aside for dipping.
Lay out three or four slices of the corned beef, overlapping one another to make a “wrap.” Place a slice of Swiss cheese on top and in the middle of the corned beef and top with the drained sauerkraut. Sprinkle with a few caraway seeds. Starting at one edge of the corned beef, roll everything up tightly, into a tube. Place seam side down on a plate and microwave on power level 5 in 30-second bursts until the beef is hot and the cheese has begun to melt.
Cut into bite-sized pieces (or eat with fingers), dipping into your homemade dressing.
