Summer is the time to sit outside with your meals. There is time to relax and enjoy the company of old friends and good food. Sometimes you want a lite cool summer salad that wont weigh you down but is refreshing and tasty. Green grapes seem like a must for a good summer salad. They add a bit of zest and and citrus that will make any meal delightful.
A good friend of mine fed me this one day and it was so good that I had to have the recipe. Here it is to share with you. Please feel free to substitute ingredients or play with amounts as this recipe is a guessing recipe. Please be sure to include the green seedless grapes Enjoy!
1 3-ounce packet Ramen noodles (any flavor)
1/2 cup slivered almonds
4 cups chopped Romaine lettuce leaves
2 cups shredded cabbage
3 average size boneless chicken breasts cooked and sliced into bite size pieces.
2 cups green seedless grapes
2 green onions, sliced
¼ cup oil,a lite oil works best
¼ cup rice vinegar
2 tablespoons honey mustard
3 tablespoons orange juice
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
Break up the Ramen noodles into small pieces (you can substitute any Asian type noodles If you would prefer). Discard the seasoning packet. Put the noodle pieces and almonds in a dry skillet and cook slowly over medium heat, stir and toss continuously until the noodles and nuts are toasted brown, about 3-5 minutes. Put aside and let cool.
In a large salad bowl mix together the lettuce, cabbage, chicken meat, grapes, and green onions. Prepare the dressing in a small bowl by whisking together the oil, vinegar, mustard, orange juice, salt, and pepper. Combine the salad, toasted noodle mix, and dressing. Toss well and serve chilled. Serves approx 3- 4 people. Delicious!
