With the average boxed cake once prepared being around 250 calories, here are a few quick tips to making the cake a bit more healthy without sacrificing any of the yummy taste or flavor, right down to the icing!
When preparing the cake, if it calls for milk go with low fat or just use water. I use powdered milk as it has a lot less calories and does not compromise the fluffiness of the cake or the taste or texture. Plus, powdered milk is less expensive, so it saves you money as well.
When adding eggs, add only egg whites or instead of using eggs add in a tablespoon of low-fat or fat-free mayo. This lessens the cholesterol in the cake, and also makes it a lot fluffier and more moist. I always use mayonnaise when baking cakes instead of eggs or egg whites, and there is no difference in taste if you go low-fat. I don’t like to use miracle whip (too tangy), but if you’re making a lemon cake or cherry cake miracle whip instead of eggs is a great alternative and makes the cake extra moist and yummy.
When adding oil, add a bit less than what it calls for, and use peanut or coconut oil rather than traditional cooking oil. Or, eliminate oil completely and toss in another couple tablespoons of low-fat mayo for a healthy alternative to all the oils without the cake coming out too oily.
For frosting, mix cream cheese and low-fat whipped cream together and add a bit of regular cocoa powder or vanilla extract (or almond, lemon, or cherry) to taste. You get an excellent flavor without adding in all those extra calories. Or, forgo frosting altogether and simply layer the cake with a low-fat or fat-free caramel topping, butterscotch, or marshmallow cream. I like to just add fresh fruit soaked in coconut milk on any cake (I use fruit like pineapple, cherries, or strawberries, chopped) for a yummy alternative to frosting.
Add a layer of chopped, raw nuts for a tasty texture to all cakes. You can also add a great texture to the cake while cooking by adding shredded carrots or zucchini, which are delectable in any cake without compromising taste and adding a healthy food boost!
