This healthy lunch wrap is really easy to make, delicious and filling. And if you like a crunch on the side, instead of chips have carrot sticks, celery or 1 serving of low salt, low fat or low calorie crackers.
Healthy Lunch Wrap
1 medium size whole-wheat or whole-grain tortilla
3 or 4 pieces of low fat, sliced Swiss cheese, or the low fat, sliced cheese of your choice
1/4 red pepper sliced into strips
1/4 green pepper sliced into strips
1/2 cucumber, sliced thin
Put whole-wheat tortilla wrap in toaster oven or microwave. Place cheese on top of the tortilla, 3 or 4 slices should spread nicely over the entire tortilla.
For toaster oven, toast tortilla as you would use it for toast.
For microwave, depending on the power of your microwave, try 20-30 seconds to melt the cheese. Cook more time if not melted.
Take your wrap with the melted cheese out of the toaster oven or microwave and place it on your plate. Take all of your cut of veggies and scatter them around on top of the cheese.
Fold the tortilla in half like a taco shell. Enjoy!
