Fluffy Pumpkin Cheesecake Pie
This recipe makes a delicious finish to your Thanksgiving dinner. It is easy to make because there is no need for a spring-form pan.
2 – 8 oz. packages softened cream cheese ( you can use low fat cream cheese)
2/3 cup granulated sugar
2 teaspoons pumpkin pie spice (substitute 1 teaspoon cinnamon,1/2 teaspoon ground ginger and ¼ teaspoon ground cloves)
1 – 15 oz. can pumpkin
1 Keebler Ready Crust extra serving size pie crust
Step 1- In a large mixing bowl beat the cream cheese on medium speed with an electric mixer until fluffy. Add sugar and spice. Beat until it is combined.
Step 2- Add eggs, one at a time, mixing until just combined after each addition. Stir in the pumpkin.
Step 3- Pour into crust. Bake at 350 degrees for 35 to 40 minutes or until the center is almost set. Cool for 1 hour on a wire rack. Refrigerate for at least 3 hours.
Step4 – Garnish as desired. Store in refrigerator.
Black Forest Cheesecake
This cheesecake only takes 10 minutes to prep and bakes for 35 minutes. Easy to make the day before a holiday because it needs to chill for at least 3 hours before serving.
1 Graham Cracker Pie Crust
1-8 oz package of cream cheese softened
¼ cup granulated sugar
¼ cup cocoa
¼ tsp. almond extract
1 cup non-dairy whipped topping , thawed (store brand works fine)
1-21 oz. canned cherry pie filling, chilled
Step 1- Preheat oven to 350 degrees. Beat cream cheese until fluffy using an electric mixer. Add sugar and cocoa, mix well. Add egg and almond extract and mix.
Step 2- With a spatula, scrape the filling into the pie crust spreading it evenly.
Step 3- Bake for 35 minutes. Cool and refrigerate. Just before serving, top with non-dairy whipped topping and cherry pie filling.
Creamy 2-Step Cheesecake
This simple recipe allows even the novice baker to make a delicious cheesecake. Make sure to allow the cream cheese to soften fully before making this cheesecake.

1-8 oz. tub of frozen non-dairy whipped topping, thawed
1 graham cracker pie crust
Step 1- Using an electric mixer mix together cream cheese and sugar until well blended. Gently stir in whipped topping. Spoon it into the crust.
Step 2- Refrigerate 3 hours or overnight. Garnish as desired. Store leftovers in the refrigerator.
