This simple dessert is great anytime, and can be a wonderful way to use up any leftover rice you may have. There is just enough sweetness to be appealing, and enough texture to help you feel satisfied. Best of all, this pineapple ricet takes very little effort to make, leaving more time to do the things you love.
Things You Need:
1 cup uncooked rice (or two cups cooked rice)
1 small box of instant vanilla pudding
1 14 oz can of crushed pineapple
Cook the rice according to package specifications. If you like your rice a little overcooked, that is fine, cook the rice until it’s the consistency you like.
Open and thoroughly drain the crushed pineapple, then stir the pineapple into the cooked rice.
Stir in the dry vanilla pudding mix. The moisture retained in the rice and the pinepple will be enough to allow the pudding mix to cling and coat the other ingredients. Arrange the mixture into individual dessert cups, then chill. Garnish with a mint leaf and maybe a cherry just before serving.
