Cranberries are commonly thought of at Thanksgiving time, this quick bread is a simple recipe that will give you something new to do with those cranberries but also something new to add to the Thanksgiving table as well.
* 3/4 cup milk + 1 tbs lemon juice
* 1/2 cup oil
* 1 cup sugar
* 2 eggs
* 3 tbs orange zest
* 1 tsp vanilla
* 1 tsp almond extract
* 2 1/2 cups flour
* 1 tsp baking soda
* 1 cup chopped almonds (optional)
* 2 cups cranberries- fresh or frozen
* 2 tsp baking powder
Preheat oven to 325 degrees. This recipe makes four mini loaves.
In a large bowl, mix milk and lemon juice until milk has slightly thickened. Add oil, sugar, vanilla, almond extract, eggs, and orange zest and beat until well blended.
Add the rest of the ingredients and blend until mixed. Do not over mix until it is tough to stir.
Divide batter between 4 mini loaf pans. Bake at 325 degrees for 45-50 minutes. Allow to cool in the pans for 15 minutes, then remove to continue cooling.
