When the holidays roll around you begin thinking about all the delicious foods, the gorgeous decorations, the fun times with family and friends. Food is a big part of the Christmas celebration. Unique and delicious foods, which are rarely served any other time, are piled upon the Christmas table for all to enjoy. Main dishes, candies, cakes and pies – you’ll find them all. Amongst them, look closely, there he is – the gingerbread man! Those scrumptious gingerbread cookies we’ve all come to love are fun to make and perfect for the occasion!
In a large mixing bowl place 3-1/2 cups of flour, a cup of brown sugar – packed – a tsp of baking soda and a tsp of baking powder, 2 tsp ginger, 1 tsp cinnamon, a tsp of cloves and a tsp of allspice. Blend these ingredients well.
Break an egg into a small bowl and slightly beat it. Pour it into the bowl with the dry ingredients. To this bowl, add a half-cup of butter or margarine – softened – as well as ¾ cup of molasses. Mix all ingredients well. A dough will begin to form and this dough will be very stiff and impossible to stir. Continue mixing with your hands to blend it all well. Cover the bowl with a towel and place it in the refrigerator for about an hour.
Preheat oven to 350 degrees. Lightly flour the surface where you’ll roll the cookies. Turn the dough out onto the floured surface and roll it to be about a quarter-inch thick. Use gingerbread man cookie cutters to cut the cookies. Although the gingerbread men are popular there’s no rule that says you must make the cookies into gingerbread men. Use any other cookie cutters you have to make the shapes you want.
Spray a cookie sheet with non-stick cooking spray or lightly oil it. Place the gingerbread men in rows – an inch or so apart from each other – and bake for ten to twelve minutes. Remove and allow to cool. Decorate the gingerbread man cookies or serve them as-is.
If you’d like to give the cookie recipe as a gift for Christmas start with a clean jar. Mix two cups of the flour with the baking soda and baking powder. Mix the remainder of the flour with all the other dry ingredients. Layer the two different mixes in the jar. Attach a card that tells the steps to making it. The card should also list the ingredients.
