I Can’t Believe It’s Not Butter Mediterranean Blend is intended to serve as a substitute for butter. The spread does manage to successfully replicate some of the flavor that butter has, but in my experience, the difference in taste is noticeable enough where people know that real butter isn’t being used. It may also have something to do with this spread being somewhat more oily, possibly due to being made with olive oil, when compared with butter. The oiliness isn’t significant though and while it may bother others, it doesn’t bother me. That all being said, I do consider this spread to be an acceptable alternative to butter and I now use it completely in place of butter, regardless of whether I’ve just made something as simple as toast or I’m going to be making something more elaborate, like a cake. The difference in flavor is more noticeable when it comes to using the spread on toast or adding some of the spread to a bowl of corn than say baked desserts.
The reason I switched to the I Can’t Believe It’s Not Butter brand is because there’s less fat, saturated fat and no cholesterol or partially hydrogenated oils in the spread and there’s potentially beneficial Omega-3 fatty acids present in it. The fact that the spread is over two dollars cheaper than Land O’Lakes butter is another reason that I decided to make the switch. Although this spread definitely doesn’t taste as good as the Land O’Lakes butter, it taste much better than another butter alternative that I once tried but very much disliked and that was the Smart Balance spread. Since this is a spread and not a bar, I don’t have to worry about forgetting to take the tub out of the refrigerator so that it softens enough to use. I just take the tub out when I need it and use it right then and there. Of course, taking the tub out ahead of time can make the spread a little easier to spread or add to something, but the difference is pretty insignificant, I think.
I Can’t Believe It’s Not Butter Mediterranean Blend is a very good alternative to using butter. It’s cheaper, it’s healthier and it’s easier to spread. Just because it’s an healthier alternative to butter though doesn’t mean one should go overboard and use globs of it all the time. The spread does taste like butter to an extent, but it’s not as rich and it won’t make a bowl of buttered noodles, corn or plate of toast taste quite as flavorful, but I find the spread to be a more than acceptable alternative and that’s why I continue to use it.
