Red skin potatoes – 1 bag
Low fat or fat free miracle whip – 1 cup
Ranch dressing – ½ cup
Sweet relish – ½ cup
Yellow mustard – ½ cup
Hard boiled eggs – 6
Cut up potatoes into large cubes and place in a large pot with water, boil until soft. Drain potatoes in a strainer and rinse with cool water. In a large bowl add potatoes (keeping skins on the potatoes), slice boiled eggs into bowl, and add all ingredients to the bowl. IMPORTANT: Use a butter knife and rake mixture together for about 10 minutes until thoroughly mixed. Using a large fork, mix all ingredients together in till mixture is full combined. Place in a large plastic container and let chill in the refrigerator for 15 – 30 minutes. Serves 4 – 6, enjoy and make some memories.
Fun and picnic
Everyone knows that a picnic just isn’t a picnic without potato salad. Being a veteran, I have to keep in mind when bringing a dish to a picnic to be practical: What can I bring that is easy to make? What can I make that will keep its taste and be good for the whole day of the picnic? Finally yet importantly, what can I make that will be easy to transport to the picnic? The answer I came up with was my fast and easy POTATO SALAD.
Well, the first part of making a great potato salad is knowing how to make it – that is the tricking part. The next thought that came to mind, as all things come to me is “I can do anything that I put my mind to.” I started to think… “What is in a potato salad: potatoes, something to make it sweet and eggs?” This is not exaggerated, this is exactly what I thought while I was figuring out how to make my potato salad. It is a known fact that when you have a thought, it becomes active energy. If you think a good thought, more good thoughts have to come to you – because you are already thinking good thoughts. Everything had to start with someone’s thought about it.
That is exactly what I did. I thought positive and upbeat thoughts, then gathered the right tools to make my vision of what I knew would be a very tasty potato salad. I made a batch of my potato salad and it was a huge hit at the picnic. The only thing I had to bring back home with me was the container I used to hold my potato salad. Everyone enjoyed it and I had fun telling people how easy it was to make. You can spice it up or not – it is all up to you. Make it a great meal.
