What’s the best part of a Thanksgiving dinner? Well, that’s a hard question to answer but many people would probably vote for the dessert: pumpkin pie! Not one of those frozen pumpkin pies that are easy to make but not as good as a homemade one. A real pumpkin pie that’s made by hand! Sounds like a lot of work, doesn’t it? By the time you’ve mixed, rolled and cut the dough you’re exhausted and then you still have to mix up the pumpkin pie part. Whew! That’s just too much work! That’s why many people started going the simpler route and buying frozen pies.
You can enjoy the deliciousness of a real pumpkin pie, without being too exhausted to eat it, by eliminating all that crust business. A pumpkin pie with no crust? Unheard of! Until now. It’s so easy to mix up a pumpkin pie that is so scrumpious that no one will miss the crust! Think the pie won’t keep its shape without a crust? Wrong!
Start with a cup of canned pumpkin in a large bowl. Make sure you don’t buy the pumpkin pie mix which is already spiced. Use the plain, canned pumpkin. Add a half-cup of the original Bisquick mix and a half-cup of sugar. Add a cup of evaporated milk and a tablespoon of butter. On top of that add a teaspoon and a half of pumpkin pie spice, a teaspoon of vanilla and two eggs. Stir all of these ingredients together at the same time until well-blended.
Preheat oven to 350 degrees and set the pie in the center of the rack. Bake 35 to 40 minutes. To test the pie to see if it’s done insert a butter knife in the middle of it. If it comes out clean, it’s finished. If not, bake 5 more minutes and do the knife test again. After removing the pie from the oven allow it to cool for about 30 minutes. Set it in the refrigerator after that until thoroughly chilled – about 2 or 3 hours.
Serve the pumpkin pie with a dollop of whip cream. Or, sprinkle cinnamon on each plate, set the pie on the cinnamon, then top with whipped cream and cinnamon stick. You’ll be happy to bring the pumpkin pie this year for Thanksgiving dinner because it’s just so easy to make!
