It is a glorious realization in discovering that the foods we enjoy and dishes we create can also benefit our health, especially when we use them in an intention manner while enjoying their full flavors and textures.
An example of that would be in this articles shared recipe which the primary ingredient is cucumber. Cumbers are beneficial for our well being since they are high in B-complex vitamins and potassium. Some of the benefits are controlling cases of eczema, arthritis and gout. The potassium is wonderful for any problems with high and low blood pressure. It has also been proven beneficial for those with problems in teeth and gum diseases and can help prevent your finger and toe nails from splitting. It has been associated with healing properties to diseases related to kidney, urinary, bladder, liver and pancreas, as well as benefiting those with diabetes. (1)
One of the other ingredients to our recipe that is wonderful for our well-being is avocado. Avocados are beneficial in lowering cholesterol levels, helping those who suffer with psoriasis; it slows down the aging process; it helps neutralize free radicals that can cause cell damage and lead to disease; it helps lower LDL (bad) cholesterol and raise HDL (good) cholesterol. It supports digestive and circulatory concerns; it promotes cell and tissue development; it has been found to protect against heart disease and some forms of cancer. (2)
Another primary ingredient we’ll take a look at here is arugula, which is recognized for blood clotting, bone health, anti-cancer benefits, reducing the risk of breast cancer and prostate cancer, aiding in reducing the risk of macular degeneration and cataracts, and reduce the risk of heart attack. As we can see, individually our natural foods can do wonders and combining them can be amazing for our well being. All ingredients are best when selected organically and not treated with chemicals and pesticides to interfere with the above healing and nutritional qualities. The same applies to fruits, vegetables’ or other foods we eat that have been genetically modified or induced with hormones to grow bigger and faster -which we will ingest and will be physical effected, thus our hormonal and chemical make up will be effected by ingesting them. It is to our individual benefit to become more aware and educated as to the effects these processes have on our bodies and to the lives of our loved ones, to have a full understanding.
Our foods can help support a healing process, as well as preventive health measures, along with our daily enjoyment and healthy eating habits. For example, by understanding the quality of their nutritional value, you would understand which foods and which food combinations would assist/support the immune system during cancer treatment and recovery; or what to eat to prevent colds, flues and lower risks of heart attacks.
The foods we eat, though it may be obvious, support our mental health, as we ensure proper nutrition to the body, it includes support to the brain function and mental processing -thus nutrition to support the functioning of the nervous system and mental faculties as well. Researched studies over the past several years have demonstrated the effects and correlations between various illnesses and cognitive development and nutrients which were lacking, that when increased, improved well being and in some cases eliminated the dysfunctions.
I am introducing a cold Cucumber soup:
1 medium Cucumber, peeled, seeded and diced
¾ – 1 cup Arugula, cleaned, chopped
1 small ripe Avocado or ½ large, chopped and peeled
1 Tbls fresh lemon juice
1 large clove of garlic, crushed
¾ cup water
1/8 tsp sea salt
1 Tbls extra virgin Olive Oil
¼ cup cilantro & parsley (may choose to use either; flavor enhanced with combination)
Blend all ingredients in a high powered blender, such as an emulsifier until smooth. Example brands would be a Blendtec or a VitaMix. Chill for 1-2 hours and serve. This serves 2. May also be enjoyed immediately after blending; the heat of the blade warms the soup and is also delicious. Garnish with a sprinkle of black pepper and Nutritional yeast on top. Enjoy!
