There is a certain panic that takes over the brain when you get a hankering for a big plate of scrambled eggs for breakfast and discover you only have one egg. It is disappointing, to say the least. Don’t worry! There are many great things you can make with just one egg. My favorite is the classic egg sandwich. What you will need:
2 pieces of bread
Mayonnaise or miracle whip salad dressing
A slice of cheese
Deli meat of choice
I begin my egg sandwich by putting the bread in the toaster. While that is toasting, I cook my egg in the microwave. Yes! In the microwave! Using a small glass bowl, I spray it with cooking spray and crack the egg in there. Use a fork to pierce the yolk. It does not need to be beat at all, just make it so it doesn’t make a mess in your microwave. Cover the bowl with a damp paper towel or napkin. If you like a spicy sort of breakfast, use a little Mrs. Dash of your preference on you egg before cooking. It takes about 45 seconds for your egg to cook, depending on the size and strength of your microwave. Soon your toast will pop up. Wave it around for a bit to cool it off, then spread some mayonnaise goodness on there. Only put it on one piece. I prefer to put my meat next to the mayonnaise. This sandwich can be made without the deli meat if you prefer. By now, your egg is done. Make sure the yolk is cooked thoroughly!! I found out the hard way you do not want to have a runny yolk egg sandwich in the car on the way to work. Take the egg out and place on the piece of bread that has the mayonnaise and meat on it. Place your slice of cheese on top of the hot egg and cover with the naked piece of toast. This is a delicious start to your day! Enjoy!
