Ok, so I don’t think it’ll come to any surprise to my followers that I’m a fan of pumpkin foods. So, again, it shouldn’t come to surprise that I’m giving you another low-calorie pumpkin recipe. This time, I present to you, Pumpkin Oatmeal Muffins.
2 Cups Pumpkin
1 Cup Brown Sugar, Packed
1/2 Cup Canola Oil
1/2 Cup Water
2 Cups Flour
1 Cup Oatmeal
4 Teaspoons Baking Powder
1 Teaspoon Baking Soda
1 Teaspoon Cinnamon
1 Teaspoon Nutmeg
1/2 Teaspoon Ginger
1/4 Teaspoon Cloves
1/2 Teaspoon Salt
Preheat the oven to 375 degrees. I would recommend using paper muffin liners or you could grease and flour a muffin tin.
In a large mixing bowl throw all ingredients together and mix thoroughly until everything is just combined, don’t over mix. The texture should still be fairly rough not smooth.
Prepare muffin tintins 3/4 full.
Bake in the heated oven for 18-20 minutes or until a toothpick that is inserted comes out clean.
Cool in the pan or on an iron rack.
A good and healthy muffin, for only 133 calories. Please note if you use an icing or other topping, those calories are not included in the count.
