This quick and easy crock pot chicken recipe features chicken, vegetables and gravy. It is delicious, especially on a chilly day. Try this simple crock pot meal today.
Ingredients: You’ll need one pound of boneless skinless chicken breast, four medium carrots, four russet potatoes, one sweet onion and an envelope of brown gravy mix. I also like to put in a little olive oil at the bottom of my crock pot. Use pepper to taste.
Preparation: Pour a little olive oil into crock pot. Place chicken in crock pot. Wash, peel, and cut carrots, onion and potatoes into disks. Put into crock pot. Evenly sprinkle gravy packet over vegetables and chicken. Pour a cup of water over everything. Pepper to taste.
Cook: Cook on low for about six hours. Crock pot times vary considerably. Thus, cook until chicken is completely cooked through and vegetables are fork soft. You can also cook this on high for about four hours but you may need to add more water.
Variations: Zucchini and squash also taste good in this recipe. You might want to chop up and add these ingredients halfway through so that they stay intact. You can also use onion or garlic powder in place of the cut onion. For those who like extra gravy, add an extra packet of gravy. For those watching their sodium intake, you may want to use a low sodium chicken stock for the base.
This recipe is sure to be a hit with your family and friends!
